Oh my goodness, have you ever had pasta salad before? It's such a refreshing and delicious meal, perfect for hot summer days. And today, I want to share with you two different ways to make it!
Pasta Salad
First up, we have a classic pasta salad. It's so simple, but so yummy.
Ingredients:
- 1lb pasta (your choice!)
- 1 cup cherry tomatoes, halved
- 1 green bell pepper, diced
- 1 red onion, diced
- 1/2 cup sliced black olives
- 1 cup Italian salad dressing
- 1/2 cup grated Parmesan cheese
Instructions:
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine pasta, cherry tomatoes, bell pepper, red onion, and black olives.
- Add Italian salad dressing and Parmesan cheese, and mix well.
- Cover and refrigerate for at least 1 hour before serving.
Vermicelli Pasta Salad
Next up, we have a vermicelli pasta salad. This one is a bit different, but still delicious!
Ingredients:
- 8oz vermicelli pasta
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 cup chopped fresh cilantro
- 1/4 cup rice vinegar
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 garlic clove, minced
- 1 tsp grated ginger
Instructions:
- Cook vermicelli according to package directions. Drain and rinse with cold water.
- In a large bowl, combine vermicelli, cucumber, red bell pepper, and cilantro.
- In a separate bowl, whisk together rice vinegar, olive oil, soy sauce, sugar, garlic, and ginger.
- Pour dressing over pasta mixture, and toss to combine.
- Cover and refrigerate for at least 1 hour before serving.
